‘Ome Cured Bacon

Who doesn’t like bacon? I’ve even heard of vegetarians succumb to the smell of bacon frying on a Saturday morning from the local greasy spoon.

One day I was thinking ‘well how hard can it be to make my own bacon’. So I got a piece of belly pork from the butchers, took the bones out and fat off then rubbed it with liberal amounts of salt and other seasonings, put it in a plastic container in the fridge and left it there for a week, pouring off the moisture and rubbing a little more salt into the meat every other day or so.

After a week I rinsed the piece of meat thoroughly under cold water, patted it dry and then sliced it as thinly as possible. The meat certainly had the texture of bacon. The colour though was slightly off putting and even after it was cooked it was a slightly pinkish-grey colour. However it tasted fantastic!

Of course in commercial curing they use a curing salt which contains, amongst other things, saltpeter or potassium nitrate although this compound has more recently been replaced with sodium nitrate (E252) and it’s this that gives the bacon the characteristic pink colour.

You can get curing salt quite easily, it’s available on line. I however thought ‘I’ll ask my butcher for some’. Sure enough, as I was buying a big hunk of belly pork from him, he was happy to oblige. I think any decent butcher would do the same, they may charge you for it but it would be better than buying a big batch and they will even tell you how much to use for the piece of meat you’re curing.

And that’s all you need, a piece of meat to cure and some curing salt.

I tend to use belly pork for my own bacon. Simply because it’s reasonably cheap and it’s great when used in cooking sauces such as Bolognaise (Pancetta is made using the same cut of pork)

I take the bones out of the piece of meat (these go in the freezer until we have enough for some nice sticky ribs), and then I rub my curing mixture into the meat. I stick a freezer bag over my hand. You really don’t want curing salt on your hands!

I enhance my curing mixture with some spices and sugar. I’ll use some muscavado sugar for sweetness, a little allspice, a tiny pinch of chili powder and a little smoked paprika. You can use whatever you fancy though or just leave it plain.

And that’s it. Place in a non metallic container, cover and stick in the fridge. It should be ready after a couple days but I’ve left it up to a week before. It’s best to drain the excess water that comes out of the meat, however sometimes I’ve forgotten and it’s still turned out fine.

Once your meat is ready you need to rinse it and then dry it. I take the rind off the meat and roast it in one piece for the ultimate crackling! The Kids go mad for it! The meat can then be sliced, diced or left in big pieces to roast (if your doing this leave the rind on). We normally slice some and dice some and freeze it in small batches.

Believe me, your own home-cured bacon will taste amazing and will be a fraction of the cost of shop bought.

Of course the best way to enjoy it is to have a couple slices of cooked, crispy homemade bacon and a squirt of tomato ketchup sandwiched between two slices of home made bread and a nice cup of tea… Perfect!

Soup… We absolutely love it in our house. Not the tinned variety of course. It has to be ‘Ome-made! And it’s so easy to make. You take your favourite ingredients sweat them off in some butter add some stock, cook for a bit and then blitz. Not leek and potato soup though, that can’t be blitzed. That’s completely breaking the rules, that has to be… ‘lumpy’.

 

If you make your own stock it’s even better. Even if it’s chucking the bones from the leftover roast chicken in a pot and boiling for an hour, you will be left with a nicechicken stock blog base for a soup. Of course if your one of those non-meat eating types you can make a stock from those manky left over carrots at the back of the fridge any veg trimmings and some onion. If you roast the veg for 20 minutes or so you’ll get more flavour and a deeper colour to your stock too.

 

So heres a recipe for a soup I made the other day along with a recipe for some cumin, ginger and garlic croutons. If you don’t have the croutons with this soup I suggest putting the spices used to flavour them in the soup. Although this recipe has chillies and spices in it it is no way spicy. If you prefer it spicier just up the amount of red chili in the recipe.

Sweet Potato & Red Chili Soup

 

Ingredients 

 

50g butter                                                       Diced Potatoes Blog

1 medium onion roughly sliced

2 cloves of garlic roughly chopped

200g (a large baker) potato cubed

700g sweet potatoes (4 small or 3 medium)cubed

1 large carrot diced

1 teaspoon ground white pepper (or extra black if you haven’t)

1 teaspoon salt

1 heaped teaspoon mild curry massala (or curry powder)Diced Carrots Blog

1 teaspoon ground allspice

1 teaspoon dried thyme

2 litre of stock

2 medium sized red chillies deseeded and finely chopped

1 tablespoon chopped coriander

Ground black pepper and salt to taste

 

Method

 

Melt the butter in a heavy bottomed pan. Gently fry the onion and garlic for about 10 minutes.

Add both types of potato and carrot to the pan along with the white pepper, salt, curry massala, allspice and thyme. Gently sweat all the veg off for a further 10 minutes stirring so the spices don’t stick and burn.

Add your stock which should just cover the vegetables. Bring to a simmer and cook for approximately forty minutes or until all the veg is cooked through and soft. Take off the heat and carefully blitz with a hand blender, blender or food processor.

Put back on the heat and add the remaining ingredients. The soup will be ready after 20 minutes.

Cumin Ginger & Garlic Croutons

 

8 slices white bread

Olive oil

2 teaspoon crushed garlic

2 teaspoon cumin

1 teaspoon ground ginger

Salt and black pepper

 

Method

 

Cut the bread into cubes and put in a shallow roasting/baking tin.

Drizzle with oil and sprinkle with the garlic, cumin and ginger. Give the croutons a good toss and then sprinkle a little more olive oil on them and toss them again.

Put in an oven preheated to 165°C on fan setting (185°C for conventional)the croutons will take 30 – 40 minutes but you need to regularly check on them and give them a shake or turn every 10 minutes or so.

Once the croutons are cooked they can be used straight away. Once the croutons are completely cool they can be put in a sealed container where they should be good for up to five days.

Crispy Cornflake Tart… For An Old Fart!

Most people I know seem to remember this from their schooldays… I don’t! What a deprived childhood I must have had!

It’s one of Kits favourites. I remember her telling me about it and I was just looking at her with a vacant “what are you on about?” look on my face.

Then Kit turns up with a slice from a little buttie shop up the road “see! Cornflake Tart!”.

OK, I have to admit, looks like I was missing out.

Kits’ workplace has a thing about colleagues bringing something in on their Birthday so when Kits came round I suggested a Cornflake Tart… (Hence the title of the Blog… not that I’m saying Kits old, or a tart… can someone pass me a shovel please!)

This really is the easiest thing in the world to make. If you have Kids they’ll love it! However I don’t see why kids should have all the fun! Everybody loves a bit of retro these days, and when it tastes this good!

Recipe

Shortcrust Pastry

225g plain flour

100g cold diced butter

Pinch of salt

1 tbsp icing sugar

Mix the dry ingredients and then rub the butter into the flour until it resembles breadcrumbs. Add 2 – 3 tbsp iced cold water to bring the mixture together. Leave to rest in a cool (not a fridge) place for 30 minutes.

Roll the pastry out to about 3mm thickness and use to line a greased flan/quiche tin or shallow baking dish. Prick (snigger!) the base all over with a fork.

Place some baking paper in the tin followed by some tin foil and then fill with some baking beans. Bake in a preheated oven at 200°C for 15 minutes. After 15 minutes take out of the oven and remove the baking beans, foil and paper. Put back in the oven for 5 minutes or so until the pastry is cooked and beginning to colour then take out of the oven.

Warm 150g – 200g of jam (Strawberry is traditional but I used raspberry for that nice hint of tartness against the sweetness of the topping) once the jam has loosened up pour into the pastry case and carefully spread out to cover the bottom evenly.

120g golden syrup

75g butter

30g caster sugar

120g cornflakes

Melt the butter, golden syrup and sugar together in a pan. Once melted and bubbling take off the heat and add the cornflakes. Gently but thoroughly mix so all the cornflakes are coated then spoon onto the jam filled tart case. Gently spread the topping out so it is even then pop back into the oven for 5 minutes or so to set and firm up. Remove from the oven.

The tart is best eaten warm with a good dollop of custard but is equally as nice cold on it’s own. Just don’t try and sneak some when nobody’s looking as you may find yourself in detention!

BBQ Short Ribs

Short Ribs Feature BlogSo one Friday I get a call from Mick the Butcher… “Jez” (Yeah, I know it’s Jerome or ‘Ome, I’ve never been a Jez but then Mick is Mike so I guess we’re even!) “I’ve got some Highland short ribs in d’ya want ’em?”

It turns out that a restaurant had ordered them but then decided at the last minute to change their mind, more fool them… what a treat!

The beast that the ribs hailed from came from a very well looked after herd of Highland Cross (Cross as in crossed with another breed not a bit ticked off… although if they knew what was coming I’m sure they’d be pretty livid!) cattle that reside about ten minutes walk from our house. Well you can’t get much more local than that!

 

If you have never cooked short ribs at first glance they seem particularly fatty. However you have to remember that these tasty hunks of meat need slow cooking at a temperature that allows the fat to render down and flavour the rest of the meat before being given a blast on a high heat to crisp up the remaining fat.Ribs n Rub

When it comes to cooking big chunks of meat I have to admit that the Americans seem to have it right. So, dry rub of spices, seasoning, sugar and herbs it is before a last minute glaze of something slightly sweet and spicy… I just know that the kids are going to get messy for this tea time!

The best thing to have with these ribs is a nice side of chips… or fries if you want to be really Americanised, salad and a nice vinegary ‘slaw’ to cut through the richness of the meat. We even had a squirt of tomato ketchup to finish it off, to be fair it went really well!

 

Cooked Short Ribs

 

BBQ Short Rib Of Beef

 

I used 4.5 Kilo of ribs which would feed 8 hungry people. They do heat up quite well so if you have any left over you could always freeze until needed or you could halve the amount if you wanted to do less.

 

Dry Rub

2 tablespoon paprika

2 teaspoon smoked paprika (If you have it)

2 teaspoon chilli powder

1 tablespoon ground cumin

2 tablespoon Muscavado sugar (or dark brown or molasses)

2 teaspoons of salt

a good grind of black pepper

1  tablespoon dried oregano

 

Mix all the ingredients together and then rub into the ribs using your hands. The ribs can then be left to marinate up to 24 hours.

 

To cook preheat the oven to 220°C/428°F (slightly less if using a fan oven).

Place the ribs on a rack in a large roasting dish. Cover with a double layer of foil and then place in the oven. Turn the temperature down to165°C/330°F (145°C/290°F if using fan assisted oven).

The ribs can now be left to cook for 6 hours.

 

Sweet Chilli Glaze

 

50ml of vinegar (white wine or cider)

50ml water

2 tablespoon caster sugar

1 teaspoon chilli powder (or more if you like a real kick!)

dash of ‘Ome Made Chilli Sauce (or your favourite hot sauce)

1 tablespoon Tomato Ketchup

pinch of salt/pepper

1 teaspoon (about 1 clove) of crushed garlic

Put all the ingredients into a saucepan, bring to a boil and simmer gently for 20 minutes

 

Once the ribs have finished their slow cooking take out of the oven and turn the oven temperature up to a  high heat (alternatively the ribs can be finished on a BBQ or can be left to cool and finished off another day)

Take the foil off the ribs and using a pastry brush give the ribs a good coating of glaze all over.

Put back in the oven (or on a BBQ) for 20 minutes. After 20 minutes take out of the oven again, give another coating of glaze and cook for a further 20 minutes after which the ribs should look shiny, sticky and slightly charred, if not cook for a little longer.Shortribs

Once finished leave the ribs for ten minutes or so before serving, you don’t want to take the roof of your mouth off while eating… the ribs can be like the food equivalent to Napalm!

Oh… and make sure you have a hose ready to clean the kids down with afterwards!

 

 

Stir-Up-Sunday…

If you haven’t already made your Christmas Puddings then Sunday the 24th of November is the time to do it, the last Sunday before the start of Advent and traditionally known as Stir Up Sunday.

Here is a fail safe recipe for a lovely moist, boozy pudding!

 

Ingredients

 

600g mixed dried fruit and nuts. I use roughly 500g of mixed dried fruits (predominately raisins, sultanas and currants with a few cranberries, sour cherries and a good handful of glace cherries). For the nuts I usually use nibbed almonds.

500ml bottle of Guinness

300ml port

100ml brandy

 

200g shredded suet (proper beef is best, you can use vegetarian of course)

zest of 1 orange and 1 lemon

2 medium cooking apples grated

freshly grated nutmeg

1 teaspoon cinnamon

1 1/2 teaspoon ground ginger

250g muscavado sugar

75g plain flour

3 medium eggs beaten

150g breadcrumbs

 

Method

 

Soak the fruit for at least 24 hours in the alcohol (if you don’t want to use alcohol then you could use tea and orange juice)

In a large bowl mix all the ingredients together. Get the whole family to give it a stir and make a wish at the same time (my wish is that the pudding turns out ok!)

Grease a large pudding bowl and a few smaller ones (ideal for giving away to friends, family and neighbours), pour the pudding mixture into the bowls leaving an inch from the top.

Cover the mixture with a circle of greaseproof paper. cover the bowl with tinfoil (with a pleat in it to allow for the pudding to expand) and then place in a large pan on a trivet with a folded strip of tin foil underneath to allow you to lift the pudding out. Pour water into the pan to come up 2/3 of the way up the pudding basin.

Put the pan on to boil. When boiling turn down to a simmer and cover the pan. A large pudding will take 2 1/2 to 3 hours to cook (test with a skewer, the skewer wants to come out clean). I usually take the pan off the heat but leave the pudding in the water for an hour just to make sure the pudding is evenly cooked through.

Lift the pudding out of the water and set aside to cool. Once cool I take the pudding out of the basin, wrap in greaseproof paper, then cling film and then tin foil. I then put in a spare cool box where it stays until the big day.

On the day you are eating having the pudding it can either be put back in the basin it was cooked in and boiled again for an hour to heat up or it can be microwaved in short bursts (a couple of minutes at a time leaving a minute in between).

To serve place the pudding on a heatproof plate. Pour a couple tablespoons of Brandy into a ladle and gently heat over a low flame. Once the Brandy starts to shimmer pour over the pudding and light with a match.

Remember to have a bucket of water and fire extinguisher on hand… just in case!

A while ago, well it seems a long time ago, way back when the weather was dry & hot, hot, HOT! & all us Brits were saying ‘Well, we mustn’t complain!’ (BUT WE DID!) We gave one of our neighbors some chicken & duck eggs. In return a few days later he gave me some French & runner bean seedlings to grow.

Now, I’ve never grown beans, apart from a very small trial run of broad beans a couple of years ago. I’d somehow got it into my head they were like peas & to get enough of a crop to feed 6 peeps you need to plant a whole football field full!

How wrong was I?

My generous neighbour gave me 8 plants, which I as usual broke the rules with when planting them out.

You see, there’s this thing of ‘Distance’ & ‘Depth’. The distance which each seedling should be planted from each other & the depth in the soil it should be & all the finnickity stuff like Ph of soil etc…etc…(I just feel like I’m back at school doing trig & chemistry!) I just ignored it all (again school springs to mind).

‘Proper’ veg growers have now started tutting at me & now clicked away from Our Blog in absolute disgust!

I hadn’t prepared the soil (apart from turning it over & pulling out a few weeds) apart from apologising to the worm I accidently chopped in half & I basically took these little babies & planted them about 4inches (if that!) apart.

The result of not really trying? Well, to be truthful when our neighbor was on about the fact that they’d got so many beans they didn’t know what to do with them & then asked how ours were going, I kind of smiled & said ‘yeah, they’re great, the beans are fab!’.  To be honest we’d had about 6 beans in total & I felt guilty about the fact that I’d obviously not done his plants justice!

But, starting a couple of weeks ago with the rain being more of a frequent visitor we’ve had beans galore! So I’ve figured that not doing the home-work just delays them a bit….Phew!

Picking them is a nightmare! Just when you think you’ve got them all you move your head a couple of inches & find a load more. They are either very well disguised or I need glasses. Also, a funny thing I discovered is if you don’t realise you’ve been leaning into the bowl of beans you’ve picked, when you get into the house & put the bowl down & you then look down at the front of your jumper you discover 20 beans clinging to you for dear life!

So crisp, fresh beans, what to do with them? The best way I’ve found to cook them is pick them fresh & young, (when they’re about 3inch long & if you find a bit of a huge beastie hiding in the foliage just chop it up a bit) stick them in a pan with a knob of butter, a clove of chopped garlic, salt, pepper & a splash of water. Put the lid on & leave over a medium-ish heat for around 10-15mins giving it a shake every now & then. You can also add some chopped courgette & ripped-up old sorrel leaves.

Then serve when just softened but still got a bit of crunch. Yum!

Be prepared for an evening of sly smiles & duvet wafting. Well worth it though!

‘Ome Made Curry Secret II

I’ve already  done a post on making your own curry masala. I thought it was about time I did one on making a curry sauce.

If you’ve had a go at making your own curry masala that’s great but if not then this can be made with curry powder, paste or a basic mix of spices that I will put in the recipe.

One of the most important processes in making a good curry sauce is the cooking of the onions. The idea is to cook as much water out of the onions as possible.

My method for doing this is to puree the onions, along with the garlic and Dj stirring blogginger, in a liquidizer or food processor before they are cooked. If you haven’t got a liquidizer or food processor the onions, garlic and ginger can be cooked and then a hand blender can be used to puree your sauce at a later stage. If you have none of the above appliances you can still make a good curry, it just won’t have that texture of an Indian restaurant cooked curry.

With the following recipe don’t worry about exact quantities, it’s more about the technique and I’m sure most people will customise the recipe to their own taste.

Once the sauce is made it’s up to you what you want to serve in it. I will also give some pointers on how to turn this basic curry sauce into your favourite Indian curry.

 

Basic Curry Sauce (enough to feed four people with about 1lb/500g of main ingredient)

 

1 large onion (or 2 medium) roughly chopped (finely chopped if you have no way of pureeing).

3 big fat cloves of garlic (or more if you’re a real garlic fan) chopped roughly

2oz fresh ginger (a piece as big as your thumb) chopped

1 teaspoon of cumin seeds

1/2 teaspoon fenugreek seeds

1 level tablespoon of curry masala/powder/paste (or 1 level teaspoon of ground cumin, coriander, paprika, cinnamon, turmeric, ground ginger and chilli powder)

1 teaspoon sugar

1 teaspoon salt

1 tablespoon tomato puree

1 240g tin chopped tomatoes

1lb/500g of main ingredient (chicken, lamb, beef, prawn or vegetables)

Chopped fresh coriander to finish the curry off (and some turmeric, allspice, dried mint and garam masala)

 

Method

 

In a liquidizer/food processor/blender puree your onion garlic and ginger (they can be mixed)

In a large pan put about 6 tablespoons of oil (not olive or anything else strong flavoured). If you have ghee that’s even better.

Gently heat the oil and add the whole spices. Fry for about 30 seconds.

Add the onion, garlic and ginger. Fry gently for about 10 minutes.

Add your masala/curry powder/paste and fry gently for a minute or so adding a splash of water if it’s catching.

Stir in the tomato puree and again cook for a minute.

Add the salt and sugar.

Now add some water to the pan (about 500ml). Bring to the simmer and cook for about 20 minutes until the mixture has reduced and quite thick again.

curry cooking blogIf you didn’t puree your mixture earlier then you can puree the sauce now using a hand blender.

The chopped tomatoes can now be added (if you want a really smooth sauce you can blend again).

The sauce should be a nice thick consistency, if it’s too thick add a bit more water or stock.

Bring the sauce to the simmer and add your main ingredient.

Diced chicken will take around 20 – 30 minutes to cook. Diced lamb wants to cook for a good 75 – 90 minutes. If you are doing a vegetable curry I would par-cook the vegetables and then finish them off in the sauce for the last 20 minutes.

 

20 minutes before your curry is ready add the chopped coriander and a pinch of all spice, turmeric and dried mint and a teaspoon of garam masala.

Check for seasoning and add a little more salt if needed.

If the sauce is a little runny finish the curry off on the hob without the lid on.

I have to mention at this point that as I am writing this Kit is preparing some onions for a curry tonight. I also have to mention that Kit has forgotten to put the lid on the blender when pureeing the onions… I don’t think I have to mention that the kitchen is now covered with onions!

Anyway, where was I… Yes cook for a further 20 minutes and your curry will be ready.

 

 

 

Variations

 

The above recipe makes a medium strength curry but it’s easy to adapt and add other ingredients to make different variations.

For a Madras add 1 tablespoon of lemon juice (fresh or bottled), 1 tablespoon of ground almonds and 2 teaspoons of chilli powder 20 minutes from the end of cooking.

For a Korma add 1 tablespoon ground almonds, 3 tablespoons of cream and 2 teaspoons of sugar 20 minutes from the end of cooking.

For a Dupiaza fry 1 teaspoon of cumin seeds, 1 roughly chopped onion until caramelised add to the curry 20 minutes before the end of cooking.

For a Rogan Josh toast some flaked almonds, roughly chop 4 large tomatoes and add to the curry 20 minutes before the end of cooking.

For a Jalfrezi add 4 roughly chopped tomatoes, 6 chillies roughly sliced and two teaspoons of turmeric 20 minutes before the end of cooking.

For a  Tikka Massala  add 1 tablespoon tomato ketchup, 2 tablespoons of cream and 1 teaspoon of sugar 20 minutes from the end of cooking.

 

Or of course you can experiment with your own ‘add ins’!

 

I can especially recommend a curry made with the leftover Christmas turkey, cranberry sauce and cream… to be honest I think it went down better than the Christmas dinner itself!

The Ultimate Beef & Potato Pie…

 

After a fantastic Summer the temperature has dropped and it’s looking a little gloomy outside… (although now I am writing this it seems Summer is making a comeback!) but that’s ok, it means it’s time to start cooking those lovely comforting foods!

And what could be more comforting than a big old fashioned Meat & Potato pie, or two!

It was handy that our friendly butcher had just had delivery of a nice highland cross cow then (cross as in hybrid breed, not a bit ticked off!)

When I’m slow cooking beef for stews or pies I love to use the shin. After hours of cooking it is lovely and tender, sticky and sweet and it gives your gravy soooooo much depth of flavour and because of the gelatinous nature of the cut it naturally thickens your gravy too.

As a bonus, because we had the whole shin we got to take the bones away too to make a lovely ‘Ome-made beef stock.

And of course I couldn’t resist popping along to the local off licence (Cheers Mr Mitchell!) to get a couple bottles of ale to make the gravy with. I used Badger Breweries Poachers Choice. A lovely dark beer flavoured with Damsons. It always reminds me of Autumn and Winter. It’s one of those beers that gives you that lovely warm fuzzy feeling, ideal for drinking on a cold winters night around an open fire.  Of course some of the beer didn’t make it into the finished product!

So we have lovely rare breed, high welfare beef. ‘Ome-made beef stock to make the gravy, enriched with some rich fruity beer. A crumbly, butter laden, golden pastry crust… It all sounds fantastic but I’m sure there is something missing?

Of course! A good friend to share it with!. Cue Pete, now lets get stuck in!

 

First job is the stock.

 

If you don’t have the bones, the time or you just rather wouldn’t make your own then that’s fine. Just replace with bouillon or stock cubes.

I made this the day before I made the pie as I wanted to use the stock to cook the meat in.

So, I used the whole shin bone. Mick at the farm shop kindly cut it into three pieces so that it could fit in our stock pot.

First of all I roasted the bones a few carrots and a couple of onions in a moderate oven for roughly 45 minutes. this just starts to caramelise the flesh, fat and sinew that’s left on the bones which will help give your stock a deeper flavour and a lovely dark colour (in fact to help with this I sprinkle a bit of sugar over!).

I then put the bones, onion and carrots in a stock pot, covered with water and put on to boil. whilst the water comes up to the boil I added 1 star anise, roughly 5 bay leaves, a teaspoon of black pepper-corns and a generous pinch of thyme. The stock can now be left for a couple of hours (ours was on for about four!) simmering away.

After a few hours, or more if you have the time, you need to take the bones out of the stock and strain the stock into another pan. You can now add your ale, wine or anything else you want to flavour the stock with. This then needs to be reduced by about two thirds by boiling vigorously.

 

If there is any marrow left in the bones, scoop it out and whisk it into the stock to enrich it. In our case if MissT is knocking about then it won’t make it that far, she absolutely loves bone marrow!

The stock needs to cool and ideally be refrigerated so that the fat can solidify and be skimmed off. It is then ready to use.

Cooking The Pie filling

 

I cooked the meat in big pieces. This allowed me to cook the meat for a long time to allow the fat and connective tissue to break down, make the meat melt in the mouth, add flavour and texture to the finished gravy.

I used 3 Kilo of Shin. This made 2 pies to feed 10 – 12 hungry people. Of course you could easily half the amount or if you can’t manage two pies you can freeze one portion of the cooked mixture to make another pie or a stew at a later date.

 

Generously coat your meat with seasoned flour (the easiest way to do this is to put the flour in a plastic bag, add your meat a bit at a time and give it a good shake!).

Heat some oil in a heavy bottomed pan and then gently fry your meat until it has a nice golden colour. then add your stock to just cover the meat. bring to a simmer, cover and then put in the oven at 130°C/260°F for four hours.

In our case we now took the kids to their  swimming lessons (which takes about three hours!). If however you don’t have swimming lessons to do then I could recommend; mowing the lawn, cleaning the chickens out, fixing the leak under the sink or best of all going for a nice pint at your local!

Once the meat is cooked it can be taken out of the gravy put on a plate and covered with cling film to keep it moist.

The rest of the filling can now be added to the gravy to cook. I used around 1/2 Kilo of potatoes in big chunks, a couple of carrots cut up in big chunks a couple of medium sized onions roughly sliced and about 250g of baby button mushrooms left whole. Just chuck the whole lot into the gravy and then put back into the oven at 175°C/350°C for about an hour or until your potatoes are just cooked through.

The Pastry

I used short crust this time around. You could use puff (bought from the shop is fine) or rough puff. if you have a favourite recipe for pastry then you could use that. For two pie lids I used roughly 1 kilo of flour, so adjust your recipe to suit. I rubbed in 375g of butter to 1 kilo of flour with a couple of level teaspoons of salt added. I would normally use some lard (300g butter and 75g lard) however I had run out so to the mixture I added a couple tablespoons of beef suet. In the end it worked rather well!

Once the fat is rubbed into you flour add enough cold water (I throw a couple ice cubes in the water to really chill it) to just bring the pastry together. briefly knead and then wrap in cling film and leave to rest for at least twenty minutes.          Making Pastry

 

Creating The Pie

 

While your veg is finishing cooking make a thick roux by melting roughly 55g of butter in a heavy based pan. Once sizzling add approximately 2 tablespoons of flour and stir for a minute until you have something that resembles golden brown putty. Put to one side. This will be whisked into your gravy to get a perfect consistency.

select your pie dishes and break the meat up into them. I like to leave it fairly chunky.

Using a slotted spoon remove your cooked veg from the gravy and place among the meat.

Beef Pie Filling

Put the gravy back on a gentle heat. You can now add any extra flavourings you want. I added a generous splash of Worcestershire sauce. You want a nice thick gravy for your pie so whisk in the roux you prepared earlier, a little at a time until you have the desired consistency.

Ladle the gravy over your pie mixture. You want some of the filling to be peaking out so the pastry has something to sit on top of. You should have a little gravy left over to serve along side your pie.

Roll out your pastry to cover your filling. It wants to be just under a centimetre thick. Place the pastry over the pie dish. don’t stretch it over. You want a bit of give to allow for the pastry shrinking. Trim the edges and put a couple holes in the middle to allow steam to escape. Decorate with the excess pastry if you want and then generously egg wash the pie topping.Beef Pie Lid

The pie now needs to be cooked for 50 minutes to an hour on 195°C/380°F   (if using a fan oven reduce the temperature by about 20°C/70°F).              Once your pie is golden brown and your filling red hot the pie is ready, however it will benefit from being left for fifteen minutes or so before serving.

We had ours with Mushy Peas (or as Pete called them ‘Steeped Peas’) and gravy.

Plated Beef Pie Pies don’t come much better than this and when you have the fantastic company of an old friend it makes for a memorable meal!

Peter Piper Picked A Padron Pepper…

And it nearly blew his head off!

Well maybe not. Allegedly one in every thirty, or twenty % padron peppers is a hot one. So eating them is a bit like playing Russian Roulette… but with peppers.

For those that don’t know Padron Peppers are little chilli peppers that grow in the northwest of Spain in an area called, well, Padron of course.

I first heard of them when Rick Stein was doing his series on Spain. He cooked them the classic way, in olive oil until blistered and then sprinkled with sea salt.

I thought then that they looked delicious but that was a couple of years ago and it is only now that these little tasty morsels seem to be readily available. In fact they seem to be the new craze!

They are incredibly tasty, and generally not spicy. However it’s great fun when you get a spicy one and there is no way of telling!

We simply cook them gently in olive oil until the skin starts to blister and small flecks of charred flesh appear. They are then spooned into a bowl and sprinkled liberally with salt.

The bowl is then handed round the table and we all take one. The kids always look a bit apprehensive just in case they have picked one of the hot ones. It’s great to watch them gingerly take that first bite!

We always give the children a little pot of Greek yoghurt on the side which they dip their pepper into. And of course it helps if they do happen to get a hot one!

I whole heartedly recommend anyone to try these peppers. They really are tasty and such a simple little treat to prepare as a snack, simple starter or a full Tapas blow-out.

Just remember as they say in Spain; Os pementos de Padrón, uns pican e outros non, Padron Peppers, some are hot, some are not!

‘Ome-Made Pizza

So, I was going to do a post on pizzas at some point but not necessarily now… and then I get a tweet from someone saying they tried following my pizza recipe but it didn’t quite turn out right?

Right, so which pizza recipe was that then because I don’t recall putting one on here!

Maybe they were looking at someone else’s site?

No worries though! “I’ll put a fail safe recipe on the blog for you” I tweeted back.

So here is my guide to making a basic pizza, that’s a piece of bread topped with tomato sauce and cheese, I’ll save the poncey ones for later!

We will start with the pizza base. You can make a pizza base from a basic bread recipe. So if you have a favourite bread recipe that you are comfortable with try using that first. Otherwise give this one a go.

Pizza Base recipe (enough for 3 medium or two large pizzas)

You will knead… sorry need!

  • 500g Strong white bread flour (you simply can’t use plain flour, well you can but it will go crumbly round the edges, soggy in the middle and just won’t be right!)
  • ½ teaspoon salt
  • 1 ½ teaspoon dried yeast (or 1 x 7g sachet)
  • 1 ½ teaspoon sugar
  • 1 ½ table spoon olive oil (or sunflower/vegetable oil if you have no olive)
  • 320ml/½ pint lukewarm water

Method

  • in a jug or bowl add your sugar and yeast to the water. give a quick mix and leave for 10 – 15 minutes (it should start to foam and bubble, if it doesn’t your water was possibly too hot, your yeast is old or your water is too cold. Don’t be tempted to dissolve your salt in the water as salt will kill the yeast)
  • in a large bowl (use a larger bowl than what you think… Trust me!) mix your flour and salt and then drizzle your oil in.
  • make a well in the centre of the flour and pour in your yeast/water mixture. Pull in some of the flour into the liquid to form a thick paste and then leave for another 10-15 minutes to allow the mixture to ‘Sponge’.
  • Now mix in the rest of the flour. You should end up with a nice smooth dough. If the mix looks too dry add a little bit of water. If the mixture looks too wet and is sticky add a little more flour at a time until it you get a nice consistency.
  • You now have to knead the dough. Sprinkle a work surface and the dough with either bread flour or even better fine ground semolina (semolina gives a lovely silky finish). Put the dough on the work surface, hold the near edge of the bread with one hand and with the other push the dough away from you. The idea is that you are ‘stretching’ the mixture. At first the dough will pull apart but after 5 minutes or so the mixture will become more elastic as the gluten develops. If the mixture is still sticky keep sprinkling with flour (or semolina)
  • when you have a nice stretchy dough knead it into a nice smooth ball rub some oil over the surface put back into the bowl and either cover the bowl with a clean tea towel or cling film. The dough now needs to rise for about an hour.

Step 2 Making the tomato/pizza sauce

You will need

  • 2 fat cloves of garlic chopped
  • 1 small onion chopped
  • 100ml/3½fl oz white wine or cider vinegar
  • 3 teaspoon sugar
  • small tin (140g) tomato puree
  • 1 tin (400g) chopped tomatoes
  • 2 teaspoon dried basil
  • 1 teaspoon dried oregano
  • pinch of dried thyme
  • seasoning to taste

Method

  • Gently fry the garlic and onion ’till soft.
  • Add the vinegar and sugar, turn up heat and reduce the liquid until it’s a thick syrup.
  • stir in the tomato paste and fry for a minute.
  • add all the other ingredients, stir to mix and let cook for 20 minutes.

Assembling The Pizza 

  • Knock back the risen dough (knock the air out of it by giving it a brief knead) and divide the dough into two or three depending on how many pizzas you want to make.
  • On a work surface dusted with semolina (or flour) flatten a ball of dough into a circle with the palm of your hand. Roll out the dough in a rough circle to just short of the size you want it, it wants to be about 5mm thick for a nice thin crispy pizza. If you want a thicker pizza leave the dough a little thicker.
  • Place the dough on whatever you are cooking it on. I use either pizza screens (with the holes in) or a good heavy baking sheet is fine. If using a baking sheet grease it with oil and give it a dusting of semolina or flour first.
  • Pull the dough disk to the shape and size you want. If you have made a nice elastic dough it will keep resisting, push it down onto the sheet gently to help it along.
  • You are now ready to top. First of all you want your tomato sauce. Put a dollop in the middle and work out towards the edges leaving about 1cm free.
  • If you are just using Mozzarella cheese (you will need about 500g/1lb in total) the cheese can be put  on. If you are topping with anything else then sprinkle a layer of cheese on the pizza before putting your other ingredients on (don’t overload the pizza!) and then finish with some more cheese.
  • to finish the pizza off give it a grind of black pepper, sprinkle with some dried oregano and then give it a light drizzle of olive oil.
  • If you like a thicker base allow the pizza to stand for 40 minutes to allow the base to prove again. If you like a thinner and more traditional Italian style base then put in an oven at 220°C/428°F (if using a fan oven lower the temperature to 200°C/392°F).
  • Give the pizza 12 minutes and then turn and give another 10 – 15 minutes. When golden and bubbling take out the oven. leave for about 10 minutes before slicing and serving.

I sometimes brush some melted garlic butter over the pizza about 5 minutes before it comes out of the oven. This gives it an amazing finish!

As for toppings? Anything goes. Our favourites are sliced chilli peppers, black olives, chorizo, sliced red onion and thinly sliced mushroom (not too many, they’ll make the pizza soggy). I tend not to put fresh tomato on as again it tends to make the pizza soggy.

You don’t have to use processed, grated mozzarella either. Try tearing strips off fresh mozzarella for the top of your pizza (don’t worry about having areas with no cheese on, we prefer them that way!). Goats cheese makes a lovely topping too, try a goats cheese and rocket topping for a sophisticated touch!
